The Campos Brothers almond manufacturing plant was conceived and
built because of fundamental beliefs about the need for product
consistency, the importance of sophisticated product development support,
and the significance of vendor service with agricultural ingredients. Once
our quality natural almonds are screened and graded to California
standards, we select them as the raw ingredients for custom manufacturing
based on their appropriateness for each value-added customer specification
or industry-standard requirement.

Blanching
Our blanching line optimally removes skins and maintains
inherent product color by controlling the quality of incoming raw product
and precisely managing temperature and moisture through each step of the
blanching/drying/cooling process.
Cutting and Dicing
Our cutting and dicing lines have been designed to maximize the
impact of manual sorting f or
defects and foreign materials in order to deliver on the most rigorous
specifications. We condition the almonds for pliability during the cutting
or dicing process based on the requirements of individual product specifications. We precisely
control temperature and moisture to increase overall uniform color, and we
apply either ambient or sophisticated refrigerated cooling to maintain
year-round manufacturing consistency. We always "slow dice" in oversized
equipment, use oversized sifters to improve quality, and immediately
package for shipment.
Other Processes
One
of the world's largest and most sophisticated almond roasters let
customers design creative specifications and lets us produce their
ingredients closer to the time of their actual use. Our Proctor roaster
helps our manufacturing staff fill orders smoothly and deliver a more
consistent finished product by letting us roast and slowly cool every
almond prior to final quality checks for
specification and color. Typically, we roast longer at lower temperatures
than the industry standard, to retain natural quality, and use slower
cooling lines to increase consistency.
